Cashew Cheese: Simple to Make & Delicious!

Cashew Cheese

I tried cashew cheese for the first time 5 years ago at my favorite vegan restaurant in LA, Real Food Daily. I couldn’t believe how delicious it was and couldn’t wrap my head around how they made cheese out of cashew nuts… Turns out that it only requires 7 simple ingredients and a food processor!

Try this simple, delicious and so nutritious cashew cheese on a veggie burger, with carrots, apple slices or your favorite gluten-free crackers. Just beware. It is addicting 😉

Cashew Cheese:

  • 3 cups raw cashews soaked in water overnight
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons filtered water
  • 6 basil leaves
  • 1 tablespoon parsley

Combine ingredients in a food processor and process until smooth and creamy. Then, enjoy!
