Homemade Chocolatey Superfood Energy Bars

I am in love with this recipe. After playing around with a few ingredients, I found a way to include as many nutrient-rich superfoods in these filling and delicious homemade bars. My non-vegan friends compare them to Kind bars.

They are great as a breakfast bar or afternoon snack. Plus,  I love that these ingredients are all natural, raw, vegan and have a long shelf-life. That means you can make energy bars for months!

This recipe makes 7 medium-sized bars.

Ingredients:
1 cup dried dates
1/4 cup gojiberries
1/4 cup frozen blueberries
1/4 cup roasted carob powder
1/4 cup flax seeds (ground)
1/4 cup chia seeds
1/4 cup hemp protein
1/4 cup pumpkin seeds
2 tbs. fresh lemon juice

Mix all these ingredients in your Vitamix or food processor until mixed well. Then, scoop out the mixture and make them into rectangular-shaped bars. You can wrap each one in wax paper and store them in the refrigerator so you can easily grab them when on the go.

For future batches, you can add variety by adding 1/4 cup of coconut chips, almonds or vegan chocolate chips.
